"Meeting the people is half the fun," says Peter Clark, an Augusta native who has spent enough time in the south to really know his barbecue. "You have to reach the taste of the people who are buying from you," he states.
Reaching the taste includes smoking his own meats, making his own sauce, and having a few secret — but not too spicy — ingredients.
"We're trying to do something a little different," Pete explains. He'll always offer his basic menu of rib platters and pulled pork sandwiches at his location on Kennedy Memorial Drive near the interstate in Waterville. But he's going to start adding weekly specials, maybe a chicken dish that customers can call in to find out about. Most of all, however, he plans on building up his catering business, which can provide salads, desserts, and other courses to embellish the basic barbecue.
"Quantity has never been an issue for me," states Pete who has catered several special events this summer and is currently planning for a large wedding reception.
