Tourtière: A Savory Quebecois Tradition

Tourtière

Always on the menu at Lauria's by the River in Augusta

Tourtière is a delicious Quebecois tradition savored in Maine among Franco-Americans, Francophones, and everyone who loves good eating. Variations on Mémé's (Grandmother's) recipe, this hearty meat pie with the buttery crust is a basic meal in itself. Served with salad and garnish, it becomes an entree of art.

Some restaurants serve tourtière regularly, some as a special, some on request. Some bakeries do, too. (Hillman's in Fairfield is one of them.) To sample a wide and filling range of tourtière, enter the Tourtière Pie Contest Tasting at Waterville's Franco-American Festival on Sunday, September 12. Last year's Tasting of eleven entries was won by the Riverside Restaurant in Madison.
